First participating to SHF ever ! I've been wanting to for months and never dared to. But I'm happy I did now, and with such an inspiring theme ! Really, the possibilities seemed endless, dark chocolate is just the most wonderful treat... Classic, yet always welcoming new twists and experiments.
Even better is the fact that this month's SHF is hosted by Lovescool, one of my most favorite blogs. Actually, I can't wait to see the outcome and what people will come up with ! This is going to be so interesting...

So, after much debating with myself, I finally decided to bake a "Chocolate and Amaretti Cheesecake". I'm sure this qualifies as "new and interesting to make". At least it was for me, as are all cheesecakes, which aren't that common in Europe (except in Germany where it's called "Käsekuchen", but these just aren't the same).

All in all, I must say I'm fairly happy with how this one ended up. It's a very dense cheesecake, the chocolate taste impossible to miss. There's a crunchy and nutty feeling to it, due to the amarettis, that I simply love. On the other side, it has a slightly sour (I'm not sure that's the word) aftertaste that needs some getting used to. I suppose that the cream cheese I used, combined with the bitterness of dark chocolate are to blame for this one. I can't say it's unpleasant, just a little upsetting when you first taste it.

I'm sorry I didn't get the chance to take a pic of it once it was cut. Yet, I can assure you that it looked just as good as the outside !

Amaretti chocolate cheesecake


  • 60 g butter, melted
  • 100 g amaretti biscuits, crushed

Chocolate Filling

  • 200 g good quality dark chocolate
  • 400 g cream cheese
  • 2 medium eggs
  • 60 g caster sugar
  • 200 ml double cream
  • 50 ml Amaretto liqueur (optional)

To Finish

  • 6 amaretti biscuits, broken
  • 40 g plain dark chocolate, melted

(one 21 cm springform tin, greased)

Serves 12

To make the crust, mix the butter and amaretti crumbs then press on to the base of the prepared tin in an even layer. Chill while making the filling.

To make the filling, chop the chocolate and melt it gently in a heat proof bowl set over a pan of steaming water. Remove from the heat, stir until smooth, then let cool.

Put the cream cheese, eggs and sugar into the bowl of a food processor and process until thoroughly combined. Add the cream and process and until just mixek. With the machine running add the melted chocolate and Amaretto, if using, through the feed tube, and process until smooth.

Spoon the filling into the prepared tin and smooth the surface. Bake in a preheated oven at 170°C (327°F) Gas 3 for 40 minutes until firm. Let cool in the oven with the door ajar. When completely cold, chill overnight.

Unclip the tin and remove the cheesecake. Decorate the top with broken amaretti biscuits. Drizzle with melted chocolate, using either a greaseproof paper icing bag with the end snipped off, or a fork dipped in the chocolate.

Store the cheesecake in a covered container in the fridge, then remove 30 minutes before serving. Eat within 5 days or freeze for up to one month.

Notes : As an afterthought, I'm sorry I can't give credit for this recipe to its rightful owner. I know I copied it out of a recipe book based on chocolate, but I can't remember the title...

Ma première participation à Sugar High Friday ! Cela faisait déjà quelques mois que j'hésitais à me lancer et cette fois-ci je ne pouvais vraiment plus rater l'évènement. En effet, le thème choisi pour célébrer le premier anniversaire de SHF est le chocolat noir. Classique, mais si inspirant ! Je n'ai qu'une hâte, celle de voir ce qu'auront concocté les autres participants.

Donc, après mûre réflexion, il m'a semblé qu'un "Cheesecake au chocolat et aux amarettis" se prêterait plutôt bien à l'occasion. Le résultat me paraît d'ailleurs assez satisfaisant. Il s'agit d'un gâteau très dense, avec un goût de chocolat fort prononcé. Il a un côté craquant, au goût de noisette tout à fait irrésistible qui, par contre, est accompagné d'un ton un peu aigre (faute d'un autre mot). Ce dernier, probablement dû à la combinaison du chocolat et du fromage pour lesquels j'ai opté, n'est heureusement pas du tout déplaisant, simplement déstabilisant au premier abord.

Enfin, je n'ai pas eu la chance de le photographier une fois coupé, mais je vous assure qu'il a l'air aussi bon que vu de l'extérieur !

Amaretti chocolate cheesecake

  • 60 g de beurre
  • 100 g d'amaretti, écrasés
  • 200 g de chocolat noir
  • 400 g de fromage crémeux de type Philadelphia, ricotta ou St Moret
  • 2 oeufs de taille M
  • 60 g de sucre glace
  • 200 ml de crème fraîche
  • 50 ml d'Amaretto (optionnel)

Pour terminer

  • 6 amaretti, brisés
  • 40 g de chocolat noir, fondu

+ un moule amovible de 21 cm de diamètre

Pour réaliser la croûte, mélanger le beurre et les miettes d'amaretti puis les presser sur la base du moule graissé, de façon à obtenir une surface plane. Réfrigérer.

Hacher ensuite le chocolat et faire fondre doucement au bain-marie. Mélanger afin qu'il soit bien lisse. Laisser refroidir.

Dans un saladier ou dans le mixer, combiner le fromage, les oeufs et le sucre et mixer jusqu'à obtenir un mélange homogène. Ajouter la crème et mixer à nouveau jusqu'à ce qu'elle se soit intégrée au reste de l'appareil, pas plus longtemps. En continuant à mélanger ajouter le chocolat fondu et l'amaretto, si désiré, et mixer une fois de plus.

Remplir le moule de ce mélange à l'aide d'une cuillère et lisser la surface. Cuire dans un four préchauffé à 170°C Gas 3 pendant 40 minutes jusqu'à ce que le gâteau soit ferme. Laisser refroidir dans le four, la porte entrouverte.

Une fois tout à fait refroidi, réfrigérer le cheesecake pour la nuit.

Démouler. Décorer le dessus avec les amaretti cassés et le chocolat fondu en utilisant soit une poche à glacer, soit une fourchette trempée dans le chocolat.

Laisser dans le réfrigérateur et sortir 30 min avant de servir. Ce cheesecake peut se conserver 5 jours ou jusqu'à un mois au congélateur.

Je ne sais pas si tu as remarqué, mais j'ai publié exactement la même recette que toi, sauf que je n'ai pas trouvé d'amaretti et ai pris des langues de chats à la place... Je confirme que le gâteau est très bon - mais aussi très bourratif!

If you try the cake I'm sure you won't be disappointed, just remember that it's a very "filling" cake, as says escargot gourmand !
